Saucy Melts Grill: Big Flavor, Big Personality, and a Whole Lot of Cheese
If you have ever walked up to a food truck and immediately felt like you were talking to someone who already knew you, there is a good chance you were standing in front of Saucy Melts Grill.
Owned and operated by Di and Shane Majewski, Saucy Melts Grill is the kind of food truck that makes an impression before you even take your first bite.
Yes, the food is rich, cheesy, crispy, and packed with flavor. But the truck itself has a personality. It is a little goofy. A little bold. Very friendly. And, as the name suggests, more than a little saucy.
A Homegrown Concept
Long before Saucy Melts Grill was pulling into breweries, markets, and food truck nights around Anne Arundel County, Di and Shane were already known for feeding the neighborhood.
Their Pasadena home was the kind of place where friends gathered, neighbors stopped by, and food always seemed part of the draw. They hosted often, cooked constantly, and built the kind of backyard atmosphere where everyone felt welcome.
“We were hosting parties constantly and cooking for everyone,” Di said.
At first, it was just what they did. They cooked good food, took care of people and made sure everyone had a plate.
But after years of watching people come back again and again, the idea started to take shape. Maybe this was more than something they did for friends. Maybe the same food and energy that brought people together at home could become something they shared with the wider community.
A restaurant was a big leap, but a food truck felt like the right first step.
It gave them a way to bring their food directly to people without losing the personal, approachable feeling that made the idea work in the first place. Di started digging into the details, from business planning and permits to researching the local food truck scene and figuring out how Saucy Melts Grill could stand out.
By 2023, the pieces were coming together. Shane was still working full-time while Di pushed the business forward behind the scenes. Together, they built the foundation for a truck that would take their love of cooking, hosting, and connecting with people far beyond their own backyard.
Before long, the truck was built, the menu was ready, and Saucy Melts Grill was officially on the road.

The Duo Behind the Melts
Talking to Shane and Di, it became clear that Saucy Melts Grill works because they each bring something different to the table.
While they both contribute to the food, Shane is the chef. He handles much of the cooking, shopping, and back-of-house work. Di focuses more on the networking, planning, customer communication, Facebook updates, and the steady stream of personality that keeps people connected to the truck.
With food service, though, preparation is never-ending. That said, they share in the responsibilities of shopping, food prep and the extensive planning that keeps the whole operation moving.
It is a partnership in the truest sense. They each play to their own strengths, but the final product belongs to both of them.
While they’re proud of themselves for what they’ve created, they’re also quick to point out that they didn’t succeed in a vacuum. Close friends have stepped in to help work the truck, support them during busy events, and keep things running smoothly when it matters most.
“We wouldn’t have been able to do this without our close friends helping us on the truck,” Di said.
Comfort Food With a Saucy Twist
Saucy Melts Grill starts with something familiar, then takes it to the next level.
At the center of the menu are melts, but these are not simple grilled cheese sandwiches tossed together as an afterthought. They are stacked, pressed, and built with intention, combining crispy Texas toast, melted cheese, hearty fillings, bold sauces, and flavor combinations that feel more like a full meal than a snack.
The brisket melt has become their number-one seller, and it is easy to see why. Saucy Melts uses braised brisket instead of the smoked brisket many people expect, giving the sandwich a rich, tender bite that stands out from a typical barbecue-style melt.
The menu also includes a chicken parm melt, chicken pesto melt, Hawaiian chicken melt, and a jalapeño popper melt that Di says tastes just like the appetizer people already love.
The Cuban is a newer addition to the menu but has also started building a following of its own. It was introduced near the end of last season, and customers have been catching on quickly.
And then there are the Saucy Balls!

The name gets attention, which is exactly the point. Di and Shane know exactly what they’re doing.
The idea started on the back porch before the truck ever launched. Di and Shane were joking around, trying to come up with something fun and memorable, when they landed on fried mac and cheese balls. They take mac and cheese, roll it up, coat it in their homemade batter, and fry it until crisp.
The result is one of the truck’s signature items: playful enough to fit the brand, memorable enough to get people talking, and good enough to bring them back.
They also try to be mindful of their impact beyond the food. Saucy Melts uses paper boxes for their meals, a small but intentional choice to help support the environment. “We think that’s really important,” Di said.
Built Around Relationships
For the Majewskis, it has never been just about selling sandwiches. It is about showing up, getting to know people, and building real connections along the way.
That is part of why the truck has developed such a loyal following. You can find Saucy Melts at food truck events, breweries, apartment complexes, markets, pools, fundraisers, and local spots like Hysteria Tap House, American Legion 175 in Severna Park, Sand and Silo, the Glen Burnie Farmers Market, and Maryland Yacht Club.
Some of those stops have become especially meaningful. Hysteria Tap House supported them early, and American Legion 175 has become an important part of their story. Over time, those bookings turned into relationships.
Di brings that same personal approach online. She posts the venue schedules on Facebook, shares updates, responds to messages, and keeps customers in the loop with plenty of personality.
“I like to be personal,” she said. “We want to communicate with you. We want to get to know you.”

What Comes Next
For now, Saucy Melts Grill is focused on continuing to expand the truck’s business opportunities and serve great food.
Eventually, they would love to have a brick-and-mortar location. Another possibility is adding another truck. Before either of those things happen, their next big step may be finding someone who can help run the truck so they can focus more on cooking, prep, and operations.
Whatever the next version looks like, the heart of Saucy Melts Grill will likely stay the same.
Big flavors, real conversations, a little humor and a lot of cheese. And a husband-and-wife team that took a leap, built something from scratch, and turned a comfort food idea into one of the most memorable food trucks in Anne Arundel County.
As for the best word to describe Saucy Melts Grill, Di and Shane had two answers.
The first was obvious.
Saucy.
The second may be even more accurate.
Flavor.
